Lemon Blossom Cookies
Another delicious cookie recipe! A lot of recipes out there make blossom cookies using peanut butter. I thought that for a nice change, I would try out the recipe using lemons instead. These cookies came out wonderfully and it's definitely a new fan favourite in my home!
Ingredients:
2 1/2 cups all-purpose flour
1 cup margarine
1/3 cup of milk
3/4 cup white sugar
1 tsp. baking powder
1 tbsp. lemon extract
2 egg yolks
1 package of milk chocolate candy kisses
1. Preheat oven to 325° F and mix your flour and baking soda together in a large bowl
2. In a separate medium size bowl, cream your margarine and sugars and then add your egg yolks and lemon extract
3. Add margarine mixture to flour. Then add the milk in small amounts at a time. Don't let the batter become too runny
4. Cover batter in plastic wrap and refrigerate for 30 minutes
5. After 30 minutes, spoon out dough and roll into small balls and place on a baking sheet
6. Use your thumb to gently make a thumbprint in the centre of your cookies so that they crackle
7. Bake for 10 minutes or until cookies are golden brown
8. Once cookies are out of the oven, immediately place your milk chocolate kisses in the centre of the cookies where you made your thumbprint
9. Enjoy!
