Hamburger Vegetable Soup
A hearty beef and vegetable soup that can be enjoyed at anytime of the year. You can also serve this soup with my home-style cheese biscuits.
Ingredients:
2 lbs lean ground beef
3 cloves of garlic
Half an onion
6 cups of water
12 red nugget potatoes
1 cup of quinoa (can be substituted with either rice or barley)
3 strands of thyme
2/3 cup celery (chopped)
2/3 cup carrots (chopped)
1 cup bell peppers (chopped)
3 beef bouillon cubes
1 can tomato sauce
1/4 cup ketchup
2 bay leaves
1 tsp. oregano
1 tsp. salt
1 tsp. hot pepper sauce
1. Brown ground beef. As it cooks, add in chopped garlic and onion.
2. Once the ground beef is fully cooked, in a separate pot, add the ground beef and all of the vegetables, spices, potatoes, and the 6 cups of water.
3. Bring soup to a boil and let simmer on medium heat for approx. 35 minutes or until vegetables and potatoes are tender.
4. Serve and enjoy!
