Chili Stuffed Potatoes
Savoury chili stuffed potatoes. A mouth watering recipe that's sure to leave you satisfied. You won't be hungry after this one! Cooking your chili ahead of time will greatly cut down your overall prep time.
Ingredients:
1 lb of lean ground beef
5 potatoes
2 cloves of garlic diced
1 whole carrot chopped
1 cup diced bell pepper
1 cup chopped onion
1 cup of water
1 tsp onion powder
1 tsp cumin
1 tsp salt
2 tbsp chili powder
1 can of beans in tomato sauce
1 can of tomato paste
In a saucepan, brown your ground beef until fully cooked, then add your carrots, garlic, bell pepper, onions and let them brown for approx. 5 minutes. Once the ground beef and vegetables are fully cooked, stir in your chili and onion powder, tomato paste, beans, water, and salt. Let that simmer on low heat for 45 minutes.
Preheat your oven to 400° F. Scrub your potatoes under cold water, then put them on a baking sheet. Once your oven is done preheating, let your bake your potatoes for 45 minutes to 1 hour. When they're done, use a knife to slit the potatoes open. Use a fork to gently fluff the insides of the potatoes. Scoop your chili out evenly on to each of your potatoes. To put these potatoes over the top, dress them with some shredded cheddar cheese, ranch dressing, or sour cream and onions. Enjoy!
