Barbecue Chicken Salad
A great salad to serve on the side of your main course or as a nice light lunch.
Ingredients:
6 chicken breast strips
1/3 cup corn kernels
1/2 cup black beans
1 red bell pepper (chopped)
1/4 all purpose seasoning
5 cups chopped romaine lettuce
1/3 cup barbecue sauce
1 cup of Cracker Barrel Tex Mex cheese mix
1/3 cup ranch dressing
Season chicken with all purpose seasoning and bake in oven at 350° for about 20 minutes or until fully cooked. Then break apart the chicken into smaller pieces. In a salad bowl, mix vegetables and cooked chicken breasts. Top with cheese mix and salad dressing. Serve.
