Breakfast Burrito
What a tasty and filling breakfast! An excellent way to start the day and is sure to fill you until lunch.
Ingredients:
2 Tortillas
1/2 red bell pepper chopped
1/2 yellow bell pepper chopped
1/2 cup onion chopped
6 medium eggs
1 tbsp cream cheese
2 tsp olive oil
1/4 tsp salt
1 cup Cracker Barrel Tex Mex cheese mix
1 tbsp parsley
In a small bowl whisk eggs, salt, pepper and parsley. Heat skillet and sauté onions, bell peppers until cook, add eggs mixture to the sauté onions and bell peppers, and add cheese mix. Then heat tortillas and spread cream cheese on them. Layer eggs from skillet onto tortillas and fold into burritos.
