Sweet Bread Caribbean Delight

This Sweet West Indian treat is called sweet bread. This dessert is made and enjoyed in regions across the Caribbean and is popular around the holidays and weekends. It's a wonderful delight to share with your family and friends. Try it with coffee or tea.

Ingredients:

3 cups shredded coconut

3 cups flour

3 tsp baking powder

1 1/2 cup brown sugar

1/2 tsp salt

1 tsp vanilla extract

1/2 cup evaporated milk

5 eggs

1 cup olive oil

1 tsp nutmeg

1 tsp cinnamon

1 cup candied pineapple

1/3 cup candied cherries (cut in half)

In large mixing bowl, add dry ingredients flour, sugar, shredded coconut, baking powder, salt, candied fruits & nutmeg and mix in well. In a separate mixing bowl whisk eggs, milk & nutmeg. Next, combine liquid mix to dry mix and mix well to prevent lumps. Grease 9 x 5 baking pan and pour batter into the loaf pan. in Preheated oven, bake at 350° for 1 hour. Let stand before slicing.
