Smothered Spicy Chicken

This is also a Caribbean-influenced recipe. Chicken is another staple in the region. However, not only is this loved in the Caribbean, but pretty much all over the world in multiple cultures. The difference for this dish is in how one prepares it. This can be served with rice, mashed potatoes or any side dish of your choice. Either way, we think this dish will be the right way to spice up your palate.

6 chicken legs

1 1/2 cup olive oil

1 cup flour

1/2 scotch bonnet pepper

2 tbsp Cool Runnings Caribbean Spice and Roasted Garlic seasoning

1 tsp thyme

1 tsp rosemary

2 cloves garlic minced

1/2 onion chopped

1 cup tomatoes diced

3 cups water

Remove skin from chicken and wash well. In a separate bowl place chicken, and add seasoning, thyme, rosemary, garlic, onion, scotch bonnet pepper. Marinate chicken in the fridge for 30 minutes. In a separate plate pour the flour onto plate and coat each leg for frying. Heat skillet and add oil. Cook on medium heat. Fry each leg for 3-5 minutes on each side until brown. Remove chicken from skillet and set aside.

Drain some of the oil and leave the remaining to sauté onions, garlic, diced tomatoes, rosemary, and thyme. Sauté for 3 minutes. Add 3 cups of water and the chicken back to the saucepan. Let simmer for 35 minutes. Serve with rice, mashed potatoes and vegetables of your choice.
