Fried Fish in Gravy
This dish is truly something else. Very tasty, healthy and has TONS of Caribbean flavors. In the Caribbean, fish is one of the number one staples in the region, being caught every day, so you'll be getting fish from the ocean straight to the pot. What a delight! So try this dish out and enjoy a little splash of something truly Caribbean.
Ingredients:
I pk 1 kg Frozen Bash
1 tsp thyme
1/2 onion sliced
3 cloves garlic chopped
1 cup diced carrots
1 bell pepper chopped
1 tsp vinegar
2 tbsp "Cool Runnings" Caribbean seasoning
1 tsp "Grace" Jerk seasoning
11/2 cup olive oil
1 tbsp ketchup
1 cup flour
3 cups water
Rinse fish in cool water, then drain water completely.
Place fish in a large mixing bowl, add "Grace Jerk seasoning", Caribbean seasoning and vinegar to fish and rub in well. Marinate for 30 minutes in refrigerator. Next, in a Zip lock bag, pour 1 cup of flour and coat fish with flour. Heat skillet on medium heat and add 11/2 cup olive oil.
Fry each slice of fish for 3-5 minutes until golden brown. Remove fish from skillet and set aside. Use the same oil to sauté the diced carrots, onion slices, chopped garlic, chopped bell pepper for 5 minutes. Then add fish back to the skillet, pour 3 cups of water and add thyme & ketchup. Let simmer on low heat for 10 minutes. Serve with rice or mashed potatoes.
